As a general matter, most DUI lawyers will charge on an hourly basis. They will ask for a retainer (which is a sum of money that acts as a deposit for future legal services) and then they will be paid from that retainer as needed. If the money in the retainer is spent, then you'll be billed additional hours.
Some DUI lawyers will also agree to a flat fee representation of your DUI case. However, this usually only happens in straightforward cases where you are arranging a plea or pleading guilty. Otherwise, there is too much uncertainty as far as how long a case can take and most lawyers won't agree to a simple flat fee. This isn't to say it will never happen, it just isn't as likely.
Hiring a good DUI lawyer is worth the investment, as a DUI can be expensive and can be on your record permanently. Make sure you shop around and find a lawyer that is both within your budget and that can provide you with the experience level you need to defend yourself successfully.
